Ingredients

  • 12 ounces frozen peas, thawed
  • 4 cloves garlic
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon pepper seasoning
  • 1 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • salt
  • 1 baguette, cut into 20 pieces
  • 2 cups cherry tomatoes, halved

How To Make pea pesto crostini

  • Step 1
    Place the peas, garlic, lemon juice, lemon pepper seasoning, and Parmesan in a food processor. Process drizzling in the olive oil until the desired consistency is achieved. Taste and add salt.
  • Step 2
    Turn the broiler on high and lay the crostini on a baking pan and toast under the broiler about 3 minutes per side. Remove from oven.
  • Step 3
    Spread the pea pesto on the toast and top with the cherry tomatoes.
