Another recipe given to me by my mother. This is my "go to" dish for parties and gatherings, and it's lower in fat than most Texas caviar recipes. The hardest part is trying not to devour it before serving to guests!

Ingredients For pattie's kicked up southern caviar
- DRESSING

1/2 cred wine vinegar

1/2 cbalsamic vinegar

1/2 colive oil, extra virgin

1/2 csplenda, or sugar

1 tspkosher salt
-
1 tspblack pepper
-
1 Tbspdijon mustard
- CAVIAR

1 canmexicorn, drained
-
1 canrotele, drained
-
1 canblack eyed peas, rinsed and drained

1 canblack beans, rinsed and drained

1medium yellow bell pepper, diced

1medium red bell pepper, diced

1medium green bell pepper, diced

1red onion, diced
-
1cucumber, peeled and diced
How To Make pattie's kicked up southern caviar

1Mix all dressing ingredients well and set aside

2In a separate bowl, mix all caviar ingredients

3Pour dressing over caviar and refrigerate in an air-tight container for at least an hour or two.

4Serve with tortilla chips, Fritos, or crackers, enjoy!
