pattie's kicked up southern caviar

Another recipe given to me by my mother. This is my "go to" dish for parties and gatherings, and it's lower in fat than most Texas caviar recipes. The hardest part is trying not to devour it before serving to guests!

Ingredients
- DRESSING
- 1/2 cup red wine vinegar
- 1/2 cup balsamic vinegar
- 1/2 cup olive oil, extra virgin
- 1/2 cup splenda, or sugar
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 tablespoon dijon mustard
- CAVIAR
- 1 can mexicorn, drained
- 1 can rotele, drained
- 1 can black eyed peas, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 - medium yellow bell pepper, diced
- 1 - medium red bell pepper, diced
- 1 - medium green bell pepper, diced
- 1 - red onion, diced
- 1 - cucumber, peeled and diced

Step 1Mix all dressing ingredients well and set aside

Step 2In a separate bowl, mix all caviar ingredients

Step 3Pour dressing over caviar and refrigerate in an air-tight container for at least an hour or two.

Step 4Serve with tortilla chips, Fritos, or crackers, enjoy!
