not your average baked spinach dip
A delicious change of pace to the regular version of spinach dip. Nice and spicy -- feel free to leave out the "pickled" jalapeno if you want the dip less spicy.

Ingredients
- 2 packages 10-oz. pkgs. frozen chopped spinach, thawed
- 1/2 cup onion, minced
- 1 pickled jalapeno, minced (optional)
- 8 ounces cream cheese, softened
- 2 cups monterrey jack cheese
- 1/3 cup half and half
- 1 teaspoon hot sauce
- 1 can rotel tomatoes and green chilies
- 1 cup fresh roma tomatoes, chopped
How To Make not your average baked spinach dip

Step 1Preheat oven to 350 degrees.

Step 2Place thawed spinach in a hand towel and squeeze to remove excess moisture.

Step 3Combine spinach with the onion, jalapeno (if using), cream cheese, grated cheese, half and half, hot sauce and rotel in a bowl. Mix well and then fold in fresh tomatoes.

Step 4Prepare a 2 quart baking dish and spoon mixture into dish. Bake for 20-30 minutes or until bubbly.

Step 5Serve with tortilla chips.
