A delicious change of pace to the regular version of spinach dip. Nice and spicy -- feel free to leave out the "pickled" jalapeno if you want the dip less spicy.

Ingredients

  • 2 packages 10-oz. pkgs. frozen chopped spinach, thawed
  • 1/2 cup onion, minced
  • 1 pickled jalapeno, minced (optional)
  • 8 ounces cream cheese, softened
  • 2 cups monterrey jack cheese
  • 1/3 cup half and half
  • 1 teaspoon hot sauce
  • 1 can rotel tomatoes and green chilies
  • 1 cup fresh roma tomatoes, chopped

How To Make not your average baked spinach dip

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Place thawed spinach in a hand towel and squeeze to remove excess moisture.
  • Step 3
    Combine spinach with the onion, jalapeno (if using), cream cheese, grated cheese, half and half, hot sauce and rotel in a bowl. Mix well and then fold in fresh tomatoes.
  • Step 4
    Prepare a 2 quart baking dish and spoon mixture into dish. Bake for 20-30 minutes or until bubbly.
  • Step 5
    Serve with tortilla chips.
