This recipe is wonderful for any mushroom lover and goes well with red wine as a before dinner appetizer or on a table for a party. I serve it with party tooth pics for easy eating. It's easy to prepare and looks lovely when it's done.

1 lb
button mushrooms
1 c
2 or 3
sprigs fresh rosemary or fresh thyme
8 clove
fresh garlic, peeled
1 sprig(s)
scallions, whites and greens separated and sliced
1 c
red wine, dry
2 Tbsp
olive oil, extra virgin
1/4 tsp
fresh ground black pepper to taste

1Combine the wine, oil, rosemary or thyme, water and salt. Bring to a boil, then reduce heat to medium, add the garlic cloves (whole) and simmer 10 min. Stir in the mushrooms and white scallions. Simmer, partially covered, about 10 min.
2Transfer the mushrooms and garlic to a serving bowl. Discard the thyme or rosemary sprigs. Boil the liquid until reduced to about 3/4 cup (or less) Pour the liquid over the mushrooms and garlic. Sprinkle with fresh black pepper and the green scallions. May garnish with a sprig or 2 of which ever fresh herb you used.
