Mushrooms & Garlic in Red Wine Sauce

1 lbbutton mushrooms
2 or 3sprigs fresh rosemary or fresh thyme
8 clovefresh garlic, peeled
1 sprig(s)scallions, whites and greens separated and sliced
1 cred wine, dry
2 Tbspolive oil, extra virgin
·fresh ground black pepper to taste
How to Make Mushrooms & Garlic in Red Wine Sauce
- Combine the wine, oil, rosemary or thyme, water and salt. Bring to a boil, then reduce heat to medium, add the garlic cloves (whole) and simmer 10 min. Stir in the mushrooms and white scallions. Simmer, partially covered, about 10 min.
- Transfer the mushrooms and garlic to a serving bowl. Discard the thyme or rosemary sprigs. Boil the liquid until reduced to about 3/4 cup (or less) Pour the liquid over the mushrooms and garlic. Sprinkle with fresh black pepper and the green scallions. May garnish with a sprig or 2 of which ever fresh herb you used.
