mushrooms & garlic in red wine sauce

This recipe is wonderful for any mushroom lover and goes well with red wine as a before dinner appetizer or on a table for a party. I serve it with party tooth pics for easy eating. It's easy to prepare and looks lovely when it's done.

Ingredients

  • 1 pound button mushrooms
  • 1 cup water
  • 2 or 3 - sprigs fresh rosemary or fresh thyme
  • 8 cloves fresh garlic, peeled
  • 1 sprig scallions, whites and greens separated and sliced
  • 1 cup red wine, dry
  • 2 tablespoons olive oil, extra virgin
  • 1/4 teaspoon salt
  • - fresh ground black pepper to taste

How To Make mushrooms & garlic in red wine sauce

  • Step 1
    Combine the wine, oil, rosemary or thyme, water and salt. Bring to a boil, then reduce heat to medium, add the garlic cloves (whole) and simmer 10 min. Stir in the mushrooms and white scallions. Simmer, partially covered, about 10 min.
  • Step 2
    Transfer the mushrooms and garlic to a serving bowl. Discard the thyme or rosemary sprigs. Boil the liquid until reduced to about 3/4 cup (or less) Pour the liquid over the mushrooms and garlic. Sprinkle with fresh black pepper and the green scallions. May garnish with a sprig or 2 of which ever fresh herb you used.
