- 1/4 cup parmesan cheese, grated

- 2 - eggs, lightly beaten
- 2 tablespoons olive oil, extra virgin
- 2 cups zucchini, shredded

Step 1In bowl, combine bisquick, cheese & pepper; mix well. Add eggs; mix well. Add zucchini; mix well.

Step 2In skillet, heat oil & drop mixture by 2 Tbsp per round, flatten. Cook 2 - 3 minutes on both sides. Drain on paper towels.
