Ingredients
- 6 yukon gold potatoes
- 1 bottle olive oil
- 1 bottle lafina chili and lime seasoning
- salt and pepper
- 1 scallion
- 1/2 cup cheddar cheese, shredded
- 1/3 cup tomato, diced
- 6 slices precooked bacon
- 1 teaspoon fresh diced cilantro
How To Make mexican potato bites

Step 1preheat oven to 350.

Step 2Add about 2 tablespoons of LaFina Chili Lime Seasoning to a bowl.

Step 3Add 1/2 teaspoon of salt to the bowl.

Step 4Add 1/2 teaspoon pepper to he bowl. Mix seasonings to combine.

Step 5Toss potatoes in Olive Oil.

Step 6Roll each potatoes in seasoning mixture and place on a cookie sheet.

Step 7Bake potatoes thirty minutes or until done. Allow potatoes to cool.

Step 8Cut each potato in half.

Step 9Scoop out the inside of potatoes into a food processor, Be careful not to over scoop!

Step 10Cook the bacon!

Step 11Add the diced scallion to the food processor.

Step 12Add the cheese to the food processor.

Step 13Add 1 teaspoon of LaFina Chili Lime Seasoning to food processor.

Step 14Add 1/2 teaspoon of salt to food processor.

Step 15Add 1/2 teaspoon pepper to food processor.

Step 16Add the Cilantro to food processor.

Step 17Pulse mixture until smooth.

Step 18Add potato mixture to a bowl.

Step 19Add the dice tomatoes to the potato mixture.

Step 20Crumble the bacon and add to the potato mixture, mix well.

Step 21Chill the potato mixture for thirty minutes.

Step 22Divided the mixture into the potato skins, Place back in oven for 5 minutes ENJOY!
