These Mexican Potato Bites are great for a meal or party.

Ingredients

  • 6 yukon gold potatoes
  • 1 bottle olive oil
  • 1 bottle lafina chili and lime seasoning
  • salt and pepper
  • 1 scallion
  • 1/2 cup cheddar cheese, shredded
  • 1/3 cup tomato, diced
  • 6 slices precooked bacon
  • 1 teaspoon fresh diced cilantro

How To Make mexican potato bites

  • Step 1
    preheat oven to 350.
  • Step 2
    Add about 2 tablespoons of LaFina Chili Lime Seasoning to a bowl.
  • Step 3
    Add 1/2 teaspoon of salt to the bowl.
  • Step 4
    Add 1/2 teaspoon pepper to he bowl. Mix seasonings to combine.
  • Step 5
    Toss potatoes in Olive Oil.
  • Step 6
    Roll each potatoes in seasoning mixture and place on a cookie sheet.
  • Step 7
    Bake potatoes thirty minutes or until done. Allow potatoes to cool.
  • Step 8
    Cut each potato in half.
  • Step 9
    Scoop out the inside of potatoes into a food processor, Be careful not to over scoop!

    Cook the bacon!

    Add the diced scallion to the food processor.
  • Step 12
    Add the cheese to the food processor.
  • Step 13
    Add 1 teaspoon of LaFina Chili Lime Seasoning to food processor.
  • Step 14
    Add 1/2 teaspoon of salt to food processor.
  • Step 15
    Add 1/2 teaspoon pepper to food processor.
  • Step 16
    Add the Cilantro to food processor.
  • Step 17
    Pulse mixture until smooth.
  • Step 18
    Add potato mixture to a bowl.
  • Step 19
    Add the dice tomatoes to the potato mixture.
  • Step 20
    Crumble the bacon and add to the potato mixture, mix well.
  • Step 21
    Chill the potato mixture for thirty minutes.
  • Step 22
    Divided the mixture into the potato skins, Place back in oven for 5 minutes ENJOY!
