Ingredients

  • 6
    yukon gold potatoes
  • 1 bottle
    olive oil
  • 1 bottle
    lafina chili and lime seasoning
  • ·
    salt and pepper
  • 1
    scallion
  • 1/2 c
    cheddar cheese, shredded
  • 1/3 c
    tomato, diced
  • 6 slice
    precooked bacon
  • 1 tsp
    fresh diced cilantro

How to Make Mexican Potato Bites

Step-by-Step

  1. preheat oven to 350.
  2. Add about 2 tablespoons of LaFina Chili Lime Seasoning to a bowl.
  3. Add 1/2 teaspoon of salt to the bowl.
  4. Add 1/2 teaspoon pepper to he bowl. Mix seasonings to combine.
  5. Toss potatoes in Olive Oil.
  6. Roll each potatoes in seasoning mixture and place on a cookie sheet.
  7. Bake potatoes thirty minutes or until done. Allow potatoes to cool.
  8. Cut each potato in half.
  9. Scoop out the inside of potatoes into a food processor, Be careful not to over scoop!
  10. Cook the bacon!
  11. Add the diced scallion to the food processor.
  12. Add the cheese to the food processor.
  13. Add 1 teaspoon of LaFina Chili Lime Seasoning to food processor.
  14. Add 1/2 teaspoon of salt to food processor.
  15. Add 1/2 teaspoon pepper to food processor.
  16. Add the Cilantro to food processor.
  17. Pulse mixture until smooth.
  18. Add potato mixture to a bowl.
  19. Add the dice tomatoes to the potato mixture.
  20. Crumble the bacon and add to the potato mixture, mix well.
  21. Chill the potato mixture for thirty minutes.
  22. Divided the mixture into the potato skins, Place back in oven for 5 minutes ENJOY!
