Ingredients
- 1 medium eggplant
- 1 large egg
- Abt 1/2 cup flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- pinch salt
- pepper to taste
How To Make maw's eggplant fritters

Step 1Peel and cube eggplant.

Step 2Cook in boiling, salted water until tender.

Step 3Drain well and mash.

Step 4Beat eggs.

Step 5Blend in flour, sugar, baking powder, eggplant, salt and pepper.

Step 6Drop by spoonful into cooking oil. Brown on both sides.

Step 7Drain well on paper towels.
