marinated mushrooms
I love mushrooms and eat them raw or cooked. This is a super simple appetizer that will disappear quickly. The recipe can easily be halved or scaled down.

Ingredients
- 2 pounds mushrooms, cleaned
- 2 15-oz cans arrtichoke hearts, drained
- 3/4 cup water
- 1/4 cup olive oil
- 1 clove garlic, chopped
- 1/4 teaspoon peppercorns
- 1/4 teaspoon ground thyme
- 1/4 cup cider vinegar
- 2 tablespoons salt (i use much less)
- 1/4 teaspoon dried basil
- 1 tablespoon bay leaf
- 1/4 cup fresh lemon juice
How To Make marinated mushrooms

Step 1Half mushrooms through stems.

Step 2Quarter artichoke hearts. (I use canned quartered artichokes).

Step 3Combine artichoke hearts and mushrooms.

Step 4Combine remaining ingredients and heat, but do not boil.

Step 5Pour over mushrooms and artichoke hearts.

Step 6Refrigerate overnight.

Step 7Remove peppercorns and bay leaf before serving.
