- 1/2 english cucumber
- 1 large celery rib
- 1 large red pepper

Step 1Peel carrot and cucumber; set aside.

Step 2Cut all vegetables to about 2 1/2 to 3-inch long.

Step 3Square carrot and cucumber by cutting one side to make it flat. Put the flat side down on the cutting board and cut another side; repeat until all sides are flat.

Step 4Slice them into 1/8-inch to 1/4-inch thick. Stalk the slices and cut them into strips that resemble matchsticks. Repeat with celery and pepper.
