Made up this recipe because I didn't have enough jalapenos to make traditional jalapeno poppers and wanted a spicy side to go with tortilla soup. Hope you enjoy.

Ingredients

  • 1/2 c
    mayonaise
  • 4 oz
    (1/2 of a block) light cream cheese
  • 1/4 c
    real bacon bits or cooked crumbled bacon
  • 3-4
    jalapenos, fresh (seeds and ribs removed if you want it mild)
  • 1/2 c
    shredded cheddar or jack cheese
  • 1/2 tsp
    garlic powder
  • 1
    loaf of French bread, sliced 1/2 inch rounds

How to Make Jalapeno Popper Toasts

Step-by-Step

  1. Heat oven to 350. Line a sheet pan with foil.
  2. Slice bread into 1/2" rounds.
  3. In a food processor, add all ingredients, except bread, and pulse until well blended but still chunky.
  4. Spread jalapeno mixture onto bread slices.
  5. Bake at 350 for 15 minutes.
