hot artichoke spread

This is another good dip/spread that I like to make and take to pot lucks. I've even been lazy and through it all in a small crock/fondu pot and it turned out great.

yield 4 ½ cups

Ingredients

  • 1/4 cup grated parmesan cheese
  • 1/2 cup cheddar cheese, shredded
  • 2 cups monterey jack cheese with jalapeno peppers ; grated
  • 3 tablespoons mayonnaise
  • 2 cans (14.oz ea.) artichoke hearts ; drained and chopped
  • 4 ounces can chopped green chili's ; drained
  • 1 clove garlic ; minced
  • 1 cup chopped fresh tomatoes
  • 3 - green onions ; thinly sliced

How To Make hot artichoke spread

  • Step 1
    In a bowl combine the first 7 ingredients.
  • Step 2
    Spread into a 1 Qt. baking dish or a 9" pie plate.
  • Step 3
    Bake uncovered @ 350° for 20-25 minutes. or until top is lightly browned.
  • Step 4
    Sprinkle with tomatoes and onions and serve with crackers and/or pita bread.
