Ingredients

  • 1 - large eggplant
  • 3 tablespoons extra virgin olive oil
  • 2 - red bell peppers
  • 1/2 cup crumbled che'vre
  • - salt and pepper

How To Make grilled eggplant w/red pepers and goat cheese

  • Step 1
    Prepare charcoal or gas grill for direct, high heat While grill heats, slice eggplant cross wide inton 1/2 in thick rounds. Brush slices with 1 tbsp olive oil; set aside.
  • Step 2
    place peppers on oiled cooking grill, cover grill turning occassionally with tongs, until skin is charred about 10 mins. Transfer to a bowl and let stand until cool enough to touch While this is cool plant eggplant on grill and cook turning ofen with wide spatula, until browned or soften when pressed 8 to 10 mins total.
  • Step 3
    Pull off discard pepper skin, stem & seeds, cut into halves and arrange on platter with eggplant, sprinkle vegetables w/salt and pepper to taste and drizzle remaining 2 tbsp oil. top with goat cheese. Serve warm or let cool.
