Ingredients
- 2 large garden fresh sweet tomatoes
- 1 large red pepper
- 4 cloves of garlic
- 2 sprigs fresh sweet basil
- 1 small onion
- 1/4 cup whipped butter
- 4 slices provolone cheese
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 dashes lemon juice
- 1 large loaf of rustic italian bread, or chabbata
How To Make grilled bruschetta

Step 1Roast 2 whole cloves of garlic, sliced onions and thinly slice red peppers in foil on grill till cooked 15-20 min. Dice when roasted and cool.

Step 2chop tomatoes in large cubes. chop fresh basil.

Step 3Take a loaf of rustic Italian bread and cut length wise in half.

Step 4Mix Butter with some roasted garlic pieces and spread over open faces of bread

Step 5delicately toast face down on grill, low temperature till done

Step 6Mix all vegetables and roasted chopped garlic and onions, top on long slices of toasted bread. Top with provolone slices and place on grill(low heat) till melted. Foil optional under bread

Step 7Slice wide pieces and serve on a wooden cutting board

Step 8Optional dipping sauce, Olive Oil and Balsamic vinegar, seasoned with fresh squeezed lemon juice
