Ingredients

  • 2 large garden fresh sweet tomatoes
  • 1 large red pepper
  • 4 cloves of garlic
  • 2 sprigs fresh sweet basil
  • 1 small onion
  • 1/4 cup whipped butter
  • 4 slices provolone cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 dashes lemon juice
  • 1 large loaf of rustic italian bread, or chabbata

How To Make grilled bruschetta

  • Step 1
    Roast 2 whole cloves of garlic, sliced onions and thinly slice red peppers in foil on grill till cooked 15-20 min. Dice when roasted and cool.
  • Step 2
    chop tomatoes in large cubes. chop fresh basil.
  • Step 3
    Take a loaf of rustic Italian bread and cut length wise in half.
  • Step 4
    Mix Butter with some roasted garlic pieces and spread over open faces of bread
  • Step 5
    delicately toast face down on grill, low temperature till done
  • Step 6
    Mix all vegetables and roasted chopped garlic and onions, top on long slices of toasted bread. Top with provolone slices and place on grill(low heat) till melted. Foil optional under bread
  • Step 7
    Slice wide pieces and serve on a wooden cutting board
  • Step 8
    Optional dipping sauce, Olive Oil and Balsamic vinegar, seasoned with fresh squeezed lemon juice
