Fried Onion Rings
Vidalia onions are the best, but you can also try other brands. Just as long as they say "sweet" on them.
I wouldn't suggest just using any other kinds like yellow or purple. Not sure of what the taste would be.
2large sweet onions (vidalia is the best)
1 Tbspvegetable oil
1 tsplemon juice
1 call purpose flour
1 1/2 tspbaking powder
1 to 1 1/4 tspsalt
1/8 to 1/4 tspcayenne pepper
·oil for deep-fat frying
How to Make Fried Onion Rings
- Cut onions into 1/2" slices; separate into rings. Place in a bowl; cover with ice water and soak for 30 minutes.
- In a bowl, beat egg, water, oil and lemon juice. Combine flour, baking powder, salt and cayenne; stir into egg mixture until smooth.
- Drain onion rings; dip into batter. In an electric skillet or deep-fat fryer, heat 1" of oil to 375 degrees. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels.
