I made these for our Labor Day get together and they were a hit.

Ingredients

  • 10 ounces cremini mushrooms
  • 2 cups panko bread crumbs
  • 1 cup flour
  • 1/2 cup corn starch
  • 3/4 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon italian seasoning
  • 1/4 teaspoon pepper
  • 1/2 teaspoon thyme
  • dash - salt
  • 1 cup buttermilk
  • - vegetable oil

How To Make fried mushrooms

  • Step 1
    Wash mushrooms and dry completely.
  • Step 2
    In a bowl, mix flour, corn starch, baking powder and all seasonings. Be sure they are mixed well.
  • Step 3
    Add the buttermilk. Mix to form a batter.
  • Step 4
    Place the bread crumbs in a shallow dish.
  • Step 5
    Dip the mushrooms in the batter. Let the excess drip off.
  • Step 6
    Roll the battered mushrooms in the bread crumbs to coat.
  • Step 7
    Heat one inch of oil in a skillet over medium heat.
  • Step 8
    Carefully add the mushrooms to the oil using tongs. Don't crowd the mushrooms. (You may need to cook in batches.)
  • Step 9
    Fry, turning occasionally, for 7 to 10 minutes or until they are golden brown.
  • Step 10
    Gently remove from the oil and drain on a paper towel lined plate. Allow to cool for 2 to 5 minutes.
  • Step 11
    Serve with dipping sauce or ranch dressing.
