1green pepper chopped

1/4 colive oil
1eggplant-peeled and diced
1 can(s)tomatoe paste 6 oz.
1/4 cred wine vinagar
1/4 cgreen stuffed olives
1teaspoon sweet basil flakes

How to Make eggplant Caviar
- Saute onion, pepper, and garlic in olive oil, until translucent
- Add-eggplant, tomato paste,vinegar,olives,sugar, basil, salt and pepper
- Add water as needed. I add water so it won't stick.
Cover and simmer 1 hour, Stirring occasionally
- Cool and serve on crackers or bread-but can also be eaten hot. I like it cold better.
