Ingredients

1onion chopped
-
1green pepper chopped
-
3-4 clovegarlic chopped
-
1/4 colive oil
-
1eggplant-peeled and diced
-
1 can(s)tomatoe paste 6 oz.
-
1/4 cred wine vinagar
-
1/4 cgreen stuffed olives
-
2teaspoons sugar
-
1teaspoon sweet basil flakes
-
·salt and pepper to taste
How to Make eggplant Caviar
- Saute onion, pepper, and garlic in olive oil, until translucent
- Add-eggplant, tomato paste,vinegar,olives,sugar, basil, salt and pepper
- Add water as needed. I add water so it won't stick.
Cover and simmer 1 hour, Stirring occasionally - Cool and serve on crackers or bread-but can also be eaten hot. I like it cold better.
