Ingredients
- 1 - onion chopped
- 1 - green pepper chopped
- 3-4 cloves garlic chopped
- 1/4 cup olive oil
- 1 - eggplant-peeled and diced
- 1 can tomatoe paste 6 oz.
- 1/4 cup red wine vinagar
- 1/4 cup green stuffed olives
- 2 - teaspoons sugar
- 1 - teaspoon sweet basil flakes
- - salt and pepper to taste
How To Make eggplant caviar

Step 1Saute onion, pepper, and garlic in olive oil, until translucent

Step 2Add-eggplant, tomato paste,vinegar,olives,sugar, basil, salt and pepper

Step 3Add water as needed. I add water so it won't stick. Cover and simmer 1 hour, Stirring occasionally

Step 4Cool and serve on crackers or bread-but can also be eaten hot. I like it cold better.
