Easy Yummy Italian Tomatoes

This recipe is wonderful for a quick side dish, or as a delightful brunch all by itself.
I also have found its quite good to put on top of a precooked chicken breast for a chicken Parmesan type flavor. Also great on a burger! I have altered it all kinds of ways to change it up, be creative and amaze your family, its delicious!

large ripe tomatoes….not peeled
shredded mozzarella or parmesan cheese
italian seasoning
extra virgin olive oil
panko bread crumbs


1Cut tomatoes into ½ inch slices
Sprinkle cooking sheet with EVOO
Dip tomatoes in panko , covering both sides
Place tomatoes on sheet with olive oil
Sprinkle the EVOO on top of the tomatoes
Place mozzarella cheese on top of the tomatoes
Finish with a garnish of Italian seasonings of your choice or
Use the premixed as I do. Remember fresh ones will scorch, so I prefer the dried ones.
2Cook for 10- 15 minutes on 350 degrees or until cheese is bubbly and starting to brown on edges
