Who doesn't like a crispy, crunchy zucchini with garlicky aioli? Especially when zucchini is so abundant at this time of year.

Ingredients

  • ZUCCHINI
  • 3 medium zucchini
  • 2 cups all-purpose flour
  • salt and pepper
  • 2 large eggs
  • 2 cups buttermilk
  • 1 teaspoon ground thyme
  • 3 cups Panko bread crumbs
  • fresh Parmesan cheese grated
  • ROASTED GARLIC AIOLI
  • 3 heads garlic
  • olive oil
  • salt and pepper
  • 1 1/2 cups mayonnaise
  • 1/3 cup lemon juice
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce

How To Make deep fried zucchini with roasted garlic aioli

  • Step 1
    In the morning, peel the zucchini and cut it into rectangles about as long as your pinky finger. Place the flour in one shallow dish and season with salt and pepper
  • Step 2
    Mix the eggs and buttermilk with the thyme in another shallow dish. Dump the Panko in a third shallow dish. Line a sheet with parchment paper.
  • Step 3
    Dredge each piece of zucchini in the flour, shaking off excess, then into the egg mixture, then Panko. Lay on the prepared sheet and let sit in the fridge for 8 hours.
  • Step 4
    To make the Aiol, preheat the oven to 425 degrees. Cut the tops off the heads of garlic and place them on a baking sheet. Drizzle with olive oil and add salt. Wrap in foil and let roast for about 45 minutes. Remove from the oven and let cool. Squeeze the bulbs from the paper.
  • Step 5
    In a food processor, add 1/2 cup of the garlic, mayo, lemon juice, parmesan cheese, Dijon mustard, and Worcestershire sauce. Process until smooth and taste, and season with salt and pepper.
  • Step 6
    Add oil to a deep fryer and bring it to 350 degrees. In batches, deep fry the zucchini for about 3 or 4 minutes.
  • Step 7
    Top with the Parmesan cheese and serve with the aioli.
