cucumber sandwiches

I love snacking and I love appetizers. I first tasted a cucumber sandwich when it was high tea time at the Cleveland Clinic's Oncology department when my dad would get chemo or have a doctor's appointment. My dad and I would get tea and some kind of little dessert or snack. This is one of the great memories I had with my dad before he passed on. We would just sit together and we'd have tea and a quick bite. I think it was something so nice that was done for the patients there and brought comfort to them and the families. So I share this recipe in honor of the time spent with my dad.

Ingredients

  • 1 - seedless cucumber
  • 1 - 8oz. package of cream cheese, room temperature
  • 1/2 cup sour cream
  • 1 - envelope ranch salad dressing mix
  • - dill weed
  • 1 package cocktail bread or any bread cut into small appetizer piece

How To Make cucumber sandwiches

  • Step 1
    Combine cream cheese, sour cream and envelope of ranch dressing mix. Spread onto slices of bread. Sprinkle with dill weed and place one slice of cucumber on top. If making sandwiches top with additional slice of bread.
