Don't forget the bacon grease. As I was sampling these, and yes I had three of them, I kept wondering what was so incredibly flavorful....finally dawned on me it was the bacon grease I had brushed on the bottom of the bread. Olive oil will of course work fine, but live a little and use bacon grease!

Ingredients

  • - **thin loaf of french bread
  • - **bacon grease or olive oil
  • - **soft cream cheese
  • - **asadero cheese (or your favorite mexican cheese)
  • - **sliced tomatoes, roasted
  • - **thai chile sauce
  • - **fresh cilantro

How To Make crostini thai mexican style

  • Step 1
    Slice french bread into about 2" slices. Brush with bacon grease on one side and place greased side down on baking sheet.
  • Step 2
    Spread softened cream cheese over top of bread slices, then top with grated cheese.
  • Step 3
    Slice tomatoes and place in non stick skillet that has been sprayed with spray oil. Cook on med high for about 5 min or until they start to soften, flip and remove from heat.
  • Step 4
    Place tomato slices on bread and pop into 400° oven on middle rack for about 10 min or until cheese melts.
  • Step 5
    Remove from oven and top with chopped cilantro and Thai chile sauce.
