Don't forget the bacon grease. As I was sampling these, and yes I had three of them, I kept wondering what was so incredibly flavorful....finally dawned on me it was the bacon grease I had brushed on the bottom of the bread. Olive oil will of course work fine, but live a little and use bacon grease!

Ingredients
- - **thin loaf of french bread
- - **bacon grease or olive oil
- - **soft cream cheese
- - **asadero cheese (or your favorite mexican cheese)
- - **sliced tomatoes, roasted
- - **thai chile sauce
- - **fresh cilantro
How To Make crostini thai mexican style

Step 1Slice french bread into about 2" slices. Brush with bacon grease on one side and place greased side down on baking sheet.

Step 2Spread softened cream cheese over top of bread slices, then top with grated cheese.

Step 3Slice tomatoes and place in non stick skillet that has been sprayed with spray oil. Cook on med high for about 5 min or until they start to soften, flip and remove from heat.

Step 4Place tomato slices on bread and pop into 400° oven on middle rack for about 10 min or until cheese melts.

Step 5Remove from oven and top with chopped cilantro and Thai chile sauce.
