crispy baked zucchini w/ marinara sauce

Ingredients
- 1 pound zucchini, washed & unpeeled - cut on the diagonal
- 3 tablespoons plain yogurt
- 1/3 cup ritz cracker crumbs
- 1/3 cup parmesan cheese, grated
- MARINARA SAUCE
- 1 can 16-oz. can stewed tomatoes, undrained and chopped
- 3 tablespoons tomato paste
- 1 small onion, minced
- 2 cloves garlic, minced or pressed
- 1 teaspoon olive oil
- 1 teaspoon sugar
- 1/2 teaspoon italian seasoning
- 1/2 teaspoon dried basil flakes
- pinch of cayenne
- salt & pepper to taste
How To Make crispy baked zucchini w/ marinara sauce

Step 1Spread each slice of zucchini with a thin layer of yogurt. Mix crumbs and parmesan together and sprinkle on both sides of zucchini.

Step 2Preheat oven to 400 degrees. Place zucchini on parchment paper and bake until golden brown - approx. 20 min.

Step 3Carefully flip zucchini and brown on the other side. Remove and place on a platter along with marinara sauce.

Step 4For Marinara Sauce -- add all ingredients and mix well - cover and simmer for approx. 30 minutes or until sauce is thickened.
