Creamy Cucumber Bites
1 largeenglish cucumber
4 ozsemi-soft goat cheese
1 smallshallot, minced
3 Tbspfig jam
1 Tbspfresh thyme leaves, chopped
1 largelemon, zested
How to Make Creamy Cucumber Bites
- Cut the cucumber into 32 round slices, each about 1/4-inch thick.
- In a bowl, mix together the goat cheese and shallot.
- Spread about 1/2 teaspoon of the cheese mixture on top of each cucumber slice. Top each with about 1/4 teaspoon of fig jam. Sprinkle a pinch of thyme on top of each appetizer.
- Place appetizers on platter, sprinkle a pinch of lemon zest on each (or some) appetizer, and serve.
If not serving immediately, wrap the platter with plastic wrap and keep in refrigerator for a few hours or until ready to serve.
