Never did like like those little fish eggs...just couldn't seem to acquire a taste for it so I have found ways to make "caviar" without it!! I'm dragging out all my entertainments recipes today and pulling my favorites...hope you all like them too!!!

Ingredients

  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon up to 2 tsp frank's red hot sauce
  • 1 clove medium garlic , minced
  • 1 dash pepper
  • 1 can 15 oz black beans, drained
  • 1 can 11 oz corn , drained
  • 1 - ripe avocado , chopped approx 1 - 1 1/2 cups
  • 1 cup chopped tomatoes
  • 1/4 cup sliced scallions, white and green parts
  • 1/4 cup fresh cilantro, chopped
  • - tortilla chips

How To Make cowboy caviar

  • Step 1
    Mix together the first 4 ingredients with 2 tsps olive oil, whisk well and set aside. Combine the rest of the ingredients (not tortillas)and gently stir to combine. Pour the dressing on top and stir just enough to coat. Spoon into a glass bowl and refrigerate covered until ready to serve.
  • Step 2
    Great served with grilled chicken or fish too.
