connie's spinach balls - dee dee's

My good friend Connie from Alabama has such a wonderful giving heart. When New Oleans flooded several years ago, she opened her home to a family that had lost their home in New Orleans due to the flooding. Actually, just the mother and her son came to live with Connie while their home was being rebuilt. The mother shared this recipe with Connie and Connie in turn shared it with me. These were such a big hit, I now make them for holidays every year. I think you will enjoy!

Ingredients

  • 2 boxes frozen chopped spinach
  • 6 - eggs, beaten
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup parmesan cheese, shredded
  • 1 small onion, chopped fine
  • 1 teaspoon poultry seasoning
  • 1 stick garlic butter, melted (i could only find garlic butter at publix)
  • 1 1/2 cups herb dressing mix (this is found in grocery store next to stove top stuffing, this is toasted bread cubes that have been seasoned )

How To Make connie's spinach balls - dee dee's

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Defrost spinach and drain well. Press liquid from spinach; set aside.
  • Step 3
    Beat eggs, add cheeses, chopped onion, and poultry season; add melted butter and spinach; mix well. Fold in the herb stuffing mix. Roll into 1 inch balls.
  • Step 4
    Bake at 375 degrees for 15 to 20 minutes.
