Every time I make this people are amazed that zucchini is even in the recipe. Even my husband, who hates veggies loves this.

You can serve this as a meal with a tossed salad or as an appetizer/finger food at a party. Served warm or room temp it won't last long!

Ingredients

  • 3 c
    zucchini, sliced thin
  • 1 c
    biscuit mix
  • 1 medium
    onion, finely chopped
  • 1/2 c
    parmesan cheese
  • 1/2 c
    vegetable oil
  • 2 Tbsp
    italian parsley, finely chopped
  • 1/2 tsp
    salt
  • 1 tsp
    italian seasoning
  • 1 clove
    garlic, minced
  • 4 large
    eggs, slightly beaten

How to Make Ciao Bella Zucchini Squares

Step-by-Step

  1. Stir all ingredients together until blended. Pour into greased 9" by 13" pan.
  2. Bake at 350 degrees for 35 minutes or until golden brown. Cool for 5 minutes before cutting into squares.
