ciao bella zucchini squares

Every time I make this people are amazed that zucchini is even in the recipe. Even my husband, who hates veggies loves this. You can serve this as a meal with a tossed salad or as an appetizer/finger food at a party. Served warm or room temp it won't last long! Enjoy!

Ingredients

  • 3 cups zucchini, sliced thin
  • 1 cup biscuit mix
  • 1 medium onion, finely chopped
  • 1/2 cup parmesan cheese
  • 1/2 cup vegetable oil
  • 2 tablespoons italian parsley, finely chopped
  • 1/2 teaspoon salt
  • 1 teaspoon italian seasoning
  • 1 clove garlic, minced
  • 4 large eggs, slightly beaten

How To Make ciao bella zucchini squares

  • Step 1
    Stir all ingredients together until blended. Pour into greased 9" by 13" pan.
  • Step 2
    Bake at 350 degrees for 35 minutes or until golden brown. Cool for 5 minutes before cutting into squares.
