Ingredients
- 12 ounces chorizo (mexican sausage, mild or medium
- 8 ounces cream cheese
- 6 ounces cheddar cheese
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 10 stalks celery
How To Make chorizo- cheese logs

Step 1In a large skillet cook chorizo until browned. Drain well and cool.

Step 2In a medium bowl beat cream cheese, shredded cheddar, mayonnaise and lemon juice until almost smooth. Stir in chorizo. Chill, covered for about 1 hour.

Step 3Cut celery stalks into 3-inch pieces. Fill each with about 1 tbsp.of cheese mixture.
