Ingredients
- 1 10-oz. box frozen chopped spinach, thawed and squeezed dry
- 1 cup ricotta cheese
- 1/4 cup romano cheese
- 1/4 cup mozzarella cheese
- 2 eggs, lightly beaten with 2 tablespoons water
- 1 teaspoon butter, softened
- 1 package frozen puff pastry, thawed according to pkg. instructions.
- 3-4 tablespoons garlic butter for brushing pastry dough
- salt and pepper to taste
- pinch garlic
- red pepper flakes to taste
How To Make cheesy spinach puffs

Step 1Preheat oven to 375 degrees F.

Step 2Combine spinach, ricotta, romano, mozzarella, salt, pepper, garlic, egg yolks, softened butter and red pepper flakes. Mix well.

Step 3Unfold puff pastry and cut into approx. 4" squares. Place a spoonful of spinach mixture in the center of each square. Dampen the edges of the dough with water and pull opposite corners up and over the filling, sealing, to make little pillows.

Step 4Place pillows seam side down on an ungreased baking sheet with parchment paper about 2 inches apart. Brush each pillow with garlic butter (mix a few tsp. melted butter with a pressed garlic clove).

Step 5Bake until golden brown, approximately 20-25 minutes. Serve warm.
