Ingredients For cheesy spinach puffs

  • 1
    10-oz. box frozen chopped spinach, thawed and squeezed dry
  • 1 c
    ricotta cheese
  • 1/4 c
    romano cheese
  • 1/4 c
    mozzarella cheese
  • 2
    eggs, lightly beaten with 2 tablespoons water
  • 1 tsp
    butter, softened
  • 1 pkg
    frozen puff pastry, thawed according to pkg. instructions.
  • 3-4 Tbsp
    garlic butter for brushing pastry dough
  • salt and pepper to taste
  • pinch garlic
  • red pepper flakes to taste

How To Make cheesy spinach puffs

    Preheat oven to 375 degrees F.

    Combine spinach, ricotta, romano, mozzarella, salt, pepper, garlic, egg yolks, softened butter and red pepper flakes. Mix well.

    Unfold puff pastry and cut into approx. 4" squares. Place a spoonful of spinach mixture in the center of each square. Dampen the edges of the dough with water and pull opposite corners up and over the filling, sealing, to make little pillows.

    Place pillows seam side down on an ungreased baking sheet with parchment paper about 2 inches apart. Brush each pillow with garlic butter (mix a few tsp. melted butter with a pressed garlic clove).

    Bake until golden brown, approximately 20-25 minutes. Serve warm.
