champiñones salteados - sauteed mushrooms

This is a Spanish recipe and is often served as tapas, but can also be a side dish. Easy to make and pretty darned tasty! My mom used to add a splash of sherry.

Ingredients

  • 1 pound mushrooms, stems trimmed
  • 2 teaspoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons flat-leaf parsley, minced
  • 2 tablespoons bread crumbs
  • salt & pepper

How To Make champiñones salteados - sauteed mushrooms

  • Step 1
    Wash the mushrooms and dry well. Cut in half.
  • Step 2
    In a large skillet, melt the butter. Add the mushrooms, garlic and parsley. Saute over medium high heat until the mushrooms are lightly browned.
  • Step 3
    Add the bread crumbs, then salt and pepper to taste.
