Celery gets a bad rap from me, as about the only time I use it is for salads, soups or stuffing. Never do I just pick up a stalk and eat it, unless its stuffed with this delicious cheese spread. Always a hit, when I make them for a get together. This is a very old recipe of my grams. I hope you try them sometime and they might make a celery lover out of you too!

Ingredients

  • Celery - hearts, trimmed, washed and dry
  • 8 ounces - shredded american cheese or velveeta
  • 1 can evaporated milk
  • 1 - egg, beaten
  • 1 tablespoon flour
  • 1 teaspoon vinegar
  • 4 tablespoons pimentos

How To Make ~ celery made delicious ~

  • Step 1
    In a medium saucepan, over medium heat, stir the cheese and milk together. Keep stirring so not to scorch. Once cheese starts melting, I whisk it to smooth out any unmelted cheese. Once cheese is melted, whisk in the flour and egg. Keep whisking until thickened.
  • Step 2
    Remove from heat and stir in pimento and vinegar. Cool until slightly warm, then spread onto celery, can then cut into individual serving pieces. At times I sprinkle with crumbled bacon, for a change.
