Ingredients

  • 2 cups steamed cauliflower
  • 1 cup steamed zucchini
  • 2 medium eggs
  • 1/2 cup whole wheat flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup red and yellow bell peppers
  • 2 tablespoons grated garlic
  • 3 small green onions chopped
  • 2 tablespoons italian parsley
  • - salt and pepper to taste

How To Make cauliflower-zucchini patties

  • Step 1
    Steam cauliflower in microwave, allow to cool, finely chop. Chop zucchini in food processor, steam in microwave, allow to cool, using tea towel squeeze water out of zucchini. Mix all ingredients together, add small amounts of water until mixture is easy to form into patties. Make 8 Patties. Place on cookie sheet sprayed with non-stick cooking spray. Oven to 350* for about 15 minutes per side. Drizzle with balsamic vinegar . *Can fry in olive oil if you prefer
