cauliflower cheese bites

I adapted this recipe from one that wanted you to fry the rounds in oil. This is far easier and healthier as well.

Ingredients

  • 1 - head of cauliflower
  • 1 cup cheddar cheese, shredded
  • 1 cup bread crumbs
  • 1/2 cup parmesan cheese
  • 1/2 teaspoon cayenne (or to taste )
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic or onion powder
  • 4 - eggs
  • 1 teaspoon worcestershire sauce
  • - olive oil

How To Make cauliflower cheese bites

  • Step 1
    Cut cauliflower into large florets and steam till tender.
  • Step 2
    Process cooked cauliflower in a food processor and pulse until cauliflower resembles rice.
  • Step 3
    Mix all dry ingredients in a large bowl.
  • Step 4
    Beat eggs and Worcestershire together. Pour over processed cauliflower and mix together.
  • Step 5
    Pour cauliflower mixture and dry ingredients together. Combine to make a rough dough.
  • Step 6
    Preheat oven to 350F. Line cookie sheets with parchment paper.
  • Step 7
    Using the olive oil to coat your fingers, make small tablespoon size rounds of dough and space evenly on baking sheets (size of rounds is up to you)
  • Step 8
    Bake in oven for 20-30 minutes or until golden and crisp on the outside.
  • Step 9
    Cool and serve with a ranch dressing dip. Makes 36-48 rounds :)
