bruschetta (quick & easy)
I was looking for a healthy snack my husband & I could have and feel good about it. We like to eat this with crispy toast slices from the grocery store. It doesn't have many calories (or fat!) and we get a filling snack. We like it best after a day in the refrigerator but it can be enjoyed right away.

- 2 teaspoons olive oil

How To Make bruschetta (quick & easy)
-
Step 1Mix everything together, except the toast slices, and enjoy right away or place in a pint jar and refrigerate. Serve on crispy toast slices. We like it best after it has had a chance to mingle the flavors overnight. Refrigerate any leftovers!
-
Step 2Seasoning amounts can be changed to individual preferences.
-
Step 3**NOTE: If you can't find the diced tomatoes with sweet onion, then use regular petite diced and add about 1/4 cup of finely diced onion.
