bruschetta (quick & easy)

I was looking for a healthy snack my husband & I could have and feel good about it. We like to eat this with crispy toast slices from the grocery store. It doesn't have many calories (or fat!) and we get a filling snack. We like it best after a day in the refrigerator but it can be enjoyed right away.

Ingredients

  • 1-14.5 oz. can hunt's diced tomatoes w/sweet onion
  • 2 teaspoons olive oil
  • 1 tablespoon white vinegar
  • 2 teaspoons refrigerated minced garlic (or 3 cloves, minced)
  • 1 teaspoon kosher salt
  • +/- 2 tablespoons dried sweet basil
  • 1/2 - 1 teaspoons italian seasoning
  • - crispy toast slices

How To Make bruschetta (quick & easy)

  • Step 1
    Mix everything together, except the toast slices, and enjoy right away or place in a pint jar and refrigerate. Serve on crispy toast slices. We like it best after it has had a chance to mingle the flavors overnight. Refrigerate any leftovers!
  • Step 2
    Seasoning amounts can be changed to individual preferences.
  • Step 3
    **NOTE: If you can't find the diced tomatoes with sweet onion, then use regular petite diced and add about 1/4 cup of finely diced onion.
