Bruschetta (Quick & Easy)

I was looking for a healthy snack my husband & I could have and feel good about it. We like to eat this with crispy toast slices from the grocery store. It doesn't have many calories (or fat!) and we get a filling snack. We like it best after a day in the refrigerator but it can be enjoyed right away.

1-14.5 oz. can(s)
hunt's diced tomatoes w/sweet onion
2 tsp
olive oil
1 Tbsp
white vinegar
2 tsp
refrigerated minced garlic (or 3 cloves, minced)
1 tsp
kosher salt
+/- 2 Tbsp
dried sweet basil
1/2 - 1 tsp
italian seasoning
crispy toast slices

How to Make Bruschetta (Quick & Easy)


  • 1Mix everything together, except the toast slices, and enjoy right away or place in a pint jar and refrigerate. Serve on crispy toast slices. We like it best after it has had a chance to mingle the flavors overnight. Refrigerate any leftovers!
  • 2Seasoning amounts can be changed to individual preferences.
  • 3**NOTE: If you can't find the diced tomatoes with sweet onion, then use regular petite diced and add about 1/4 cup of finely diced onion.
