broccoli and cheddar quinoa bites
These are great as a side or warm appetizer for a party. When I serve these it always starts a conversation about quinoa.

Ingredients
- 1/2 cup quinoa
- 1 cup chicken broth
- 2 cups cooked chopped broccoli floweretts
- 2 cups shredded cheddar cheese
- 2 large eggs lightly beaten
- 1 tablespoon whole grain mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper and cayenne pepper
How To Make broccoli and cheddar quinoa bites

Step 1Bring the quinoa and chicken broth to a boil. Reduce heat and simmer until tender and liquid is absorbed. About 15 to 20 minutes.

Step 2Mix all the remaining ingredients together with the quinoa.

Step 3Spray a mini muffin tin and spoon the mixture into each tin. bake at 350 for 20 minutes.
