breaded & pan fried tomato & portabello

Sometimes you just need a fried food fix, and this was mine. So good!

Ingredients

  • - **red tomato slices
  • - **portabello slices
  • - **yogurt, plain and non-fat
  • - **jalapeno cheese bread crumbs
  • - **black pepper
  • - **granulated onion
  • - **granulated garlic
  • - **olive oil or canola oil

How To Make breaded & pan fried tomato & portabello

  • Step 1
    I used some leftover foccacia bread I had baked and frozen. I just crumbled it up and put in the food processor to make crumbs. https://www.justapinch.com/recipes/bread/flatbread/jalapeno-onion-cheddar-foccacia-bread.html?p=1
  • Step 2
    Mix yogurt and garlic, onion and black pepper together.
  • Step 3
    Slice tomatoes and portabello's fairly thick. Rub them on both sides with yogurt mix. Then coat with bread crumbs.
  • Step 4
    Pan fry in about 2" of canola or olive oil till brown, on both sides. Your gonna want a fairly hot oil because the tomatoes will get mushy pretty fast. It took me about 2 min. per side.
  • Step 5
    One of my favorite ways to have portabello's and tomatoes is with onion, cilantro, melted cheese and Thai Garlic Sauce.
