How to Make Breaded & Pan Fried Tomato & Portabello

Step-by-Step

  1. I used some leftover foccacia bread I had baked and frozen. I just crumbled it up and put in the food processor to make crumbs. Jalapeno, Onion, Cheddar Foccacia Bread
  2. Mix yogurt and garlic, onion and black pepper together.
  3. Slice tomatoes and portabello's fairly thick. Rub them on both sides with yogurt mix. Then coat with bread crumbs.
  4. Pan fry in about 2" of canola or olive oil till brown, on both sides. Your gonna want a fairly hot oil because the tomatoes will get mushy pretty fast. It took me about 2 min. per side.
  5. One of my favorite ways to have portabello's and tomatoes is with onion, cilantro, melted cheese and Thai Garlic Sauce.
