**red tomato slices
**portabello slices
**yogurt, plain and non-fat
**jalapeno cheese bread crumbs
**black pepper
**granulated onion
**granulated garlic
**olive oil or canola oil

1I used some leftover foccacia bread I had baked and frozen. I just crumbled it up and put in the food processor to make crumbs. Jalapeno, Onion, Cheddar Foccacia Bread
2Mix yogurt and garlic, onion and black pepper together.
3Slice tomatoes and portabello's fairly thick. Rub them on both sides with yogurt mix. Then coat with bread crumbs.
4Pan fry in about 2" of canola or olive oil till brown, on both sides. Your gonna want a fairly hot oil because the tomatoes will get mushy pretty fast. It took me about 2 min. per side.
5One of my favorite ways to have portabello's and tomatoes is with onion, cilantro, melted cheese and Thai Garlic Sauce.
