How To Make breaded & pan fried tomato & portabello
-
Step 1I used some leftover foccacia bread I had baked and frozen. I just crumbled it up and put in the food processor to make crumbs. https://www.justapinch.com/recipes/bread/flatbread/jalapeno-onion-cheddar-foccacia-bread.html?p=1

Step 2Mix yogurt and garlic, onion and black pepper together.
-
Step 3Slice tomatoes and portabello's fairly thick. Rub them on both sides with yogurt mix. Then coat with bread crumbs.
-
Step 4Pan fry in about 2" of canola or olive oil till brown, on both sides. Your gonna want a fairly hot oil because the tomatoes will get mushy pretty fast. It took me about 2 min. per side.
-
Step 5One of my favorite ways to have portabello's and tomatoes is with onion, cilantro, melted cheese and Thai Garlic Sauce.
