**red tomato slices
**portabello slices
**yogurt, plain and non-fat
**jalapeno cheese bread crumbs
**black pepper
**granulated onion
**granulated garlic
**olive oil or canola oil

How to Make Breaded & Pan Fried Tomato & Portabello


  • 1I used some leftover foccacia bread I had baked and frozen. I just crumbled it up and put in the food processor to make crumbs. Jalapeno, Onion, Cheddar Foccacia Bread
  • 2Mix yogurt and garlic, onion and black pepper together.
  • 3Slice tomatoes and portabello's fairly thick. Rub them on both sides with yogurt mix. Then coat with bread crumbs.
  • 4Pan fry in about 2" of canola or olive oil till brown, on both sides. Your gonna want a fairly hot oil because the tomatoes will get mushy pretty fast. It took me about 2 min. per side.
  • 5One of my favorite ways to have portabello's and tomatoes is with onion, cilantro, melted cheese and Thai Garlic Sauce.
