  • 2 (15 1/2) oz
    cansblack-eyed peas,drained
  • 1 (10) oz
    can diced tomatoes with green chiles, drained
  • 1/2 c
    finely chopped red bell pepper
  • 1/2 c
    finely chopped yellow bell pepper
  • 1/2 c
    green onionminced
  • 3 Tbsp
    minced fresh cilantro
  • 1
    jalapeno,seeded and minced
  • 2 Tbsp
    frozen limeade concentrate,thawed
  • 1 Tbsp
    olive oil
  • 1 tsp
    salt
  • ·
    large corn chips
  • 1 can(s)
    whole kernel corn

How to Make BLACK-EYED PEA SALSA

Step-by-Step

  1. In a large bowl, black-eyed peas, diced tomatoes with green chiles,bell peppers, green onion, cilantro, and jalapeno.
  2. Add limeade concentrate, olive oil, and salt; tosing gently to combine. Cover and chill up to 3 days. Serve with corn chips.
  3. We used Fritos Scoops Corn Chips
