Ingredients
- 2 (15 1/2) ounces cansblack-eyed peas,drained
- 1 (10) ounce can diced tomatoes with green chiles, drained
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped yellow bell pepper
- 1/2 cup green onionminced
- 3 tablespoons minced fresh cilantro
- 1 - jalapeno,seeded and minced
- 2 tablespoons frozen limeade concentrate,thawed
- 1 tablespoon olive oil
- 1 teaspoon salt
- - large corn chips
- 1 can whole kernel corn

Step 1In a large bowl, black-eyed peas, diced tomatoes with green chiles,bell peppers, green onion, cilantro, and jalapeno.

Step 2Add limeade concentrate, olive oil, and salt; tosing gently to combine. Cover and chill up to 3 days. Serve with corn chips.
