black bean and corn salsa

This salsa recipe won 2nd place in our United Way Cook-Off at work. The addition of olive oil, cumin, cilantro and lime juice give this salsa a very unique flavor.

Ingredients
- 1 can black beans, drained
- 1 can shoepeg corn, drained
- 4 - jalapeno peppers, finely chopped, remove seed and veins to make it less hot
- 1 medium tomato, chopped
- 1/2 cup red onion, chopped
- 1 - whole lime (juice)
- 3 tablespoons olive oil
- 1 teaspoon ground cumin
- 1/8 cup chopped cilantro

Step 1Mix all ingredients together and chill at least 4 hours. This salsa is better the longer it sits. Serve with tortilla chips. ENJOY!
