Ingredients
- 2 pounds red onions ( diced )
- 1 pound bell pepper ( diced )
- 1 teaspoon salt
- 1/2 teaspoon coarse black pepper
- 5 tablespoons minced garlic
- 2-3 tablespoons canola oil ( for frying )
- 1 jalapeno (diced, with or without seeds, your choice )
- 1 bunch fresh cilantro (chopped )
- 14 ounces can diced tomatoes
- 15 ounces can tomato sauce
- 6 ounces can tomato paste
- 1 cup sugar
- 1/2 cup red wine vinegar
- 1/3 cup lime juice
How To Make big ole bill's sweet heat salsa

Step 1In a 5qt. pot fry the Onion, Bell Pepper, salt, pepper and Jalapeno Pepper until the onions and bell pepper are soft over medium / high heat 5 to 10 min minutes

Step 2Add the garlic and cook another 2 minutes

Step 3Add the Diced Tomatoes, Tomato Sauce and Tomato Paste stirring well and heat for 5 minutes.

Step 4Add the Cilantro, Red Wine Vinegar, Lime Juice and Sugar. Stir well and bring to a boil.

Step 5Turn heat down to a simmer and cook until desired consistency. ( I like mine on the thick side about 30 to 45 minutes )
