This was found in a community cookbook. It's a great dip with tortilla chips.

  • 2 can(s)
    black beans
  • 1 can(s)
    white corn
  • 2 can(s)
    chopped tomatoes
  • 1
    purple onion, finely chopped
  • 1/4 c
    cilantro, diced
  • 1 Tbsp
    red wine vinegar
  • 1/2 tsp
  • 1/2 tsp
    freshly ground black pepper
  • 3 Tbsp
    lime juice
  • 1
    avacado, peeled and chopped

How to Make Bean Dip


  1. Rince and drain black beans and corn.
  2. Mix together the olive oil, vinegar, salt, pepper, and lime juice.
  3. Mix beans, corn, tomatoes, onion, cilantro in a salad bowl. Add dressing and toss. Fold in avacado. Serve immediately.
