This was found in a community cookbook. It's a great dip with tortilla chips.

Ingredients

2 can(s)
black beans
1 can(s)
white corn
2 can(s)
chopped tomatoes
1
purple onion, finely chopped
1/4 c
cilantro, diced
1 Tbsp
red wine vinegar
1/2 tsp
salt
1/2 tsp
freshly ground black pepper
3 Tbsp
lime juice
1
avacado, peeled and chopped

How to Make Bean Dip

Step-by-Step

  • 1Rince and drain black beans and corn.
  • 2Mix together the olive oil, vinegar, salt, pepper, and lime juice.
  • 3Mix beans, corn, tomatoes, onion, cilantro in a salad bowl. Add dressing and toss. Fold in avacado. Serve immediately.
