Ingredients

  • 2 - medium red peppers, sweet
  • 2 - medium yellow peppers, sweet
  • 1 - medium onion, finely chopped
  • 1 can tomatoes, crushed well drained (28 ounces)
  • 1/4 cup olive oil, plus 2 tablespoons
  • 3 tablespoons pine nuts
  • 4 - garlic cloves, finely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup bread crumbs, fresh
  • 1/4 cup parsley, fresh and chopped

How To Make baked sweet red and yellow pepper wedges

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Lightly oil 13 x 9 inch baking pan.
  • Step 3
    Trim tops off peppers; discard stems and finely chop tops.
  • Step 4
    Cut each pepper lengthwise into sixths.
  • Step 5
    Place wedges, cut side up, in oiled pan; set aside.
  • Step 6
    Combine pepper tops, onion, tomatoes, parsley, the 1/4 cup olive oil, pine nuts, garlic, salt and pepper in medium size bowl.
  • Step 7
    Spoon equal amounts of mixture into each of the pepper wedges.
  • Step 8
    Bake wedges in preheated oven at 375 degrees for 25-30 minutes or until just tender.
  • Step 9
    Sprinkle bread crumbs and remaining 2 tablespoon oil over all.
  • Step 10
    Bake 10 minutes longer.
