Ingredients
- 2 - medium red peppers, sweet
- 2 - medium yellow peppers, sweet
- 1 - medium onion, finely chopped
- 1 can tomatoes, crushed well drained (28 ounces)
- 1/4 cup olive oil, plus 2 tablespoons
- 3 tablespoons pine nuts
- 4 - garlic cloves, finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup bread crumbs, fresh
- 1/4 cup parsley, fresh and chopped
How To Make baked sweet red and yellow pepper wedges

Step 1Preheat oven to 375 degrees.

Step 2Lightly oil 13 x 9 inch baking pan.

Step 3Trim tops off peppers; discard stems and finely chop tops.

Step 4Cut each pepper lengthwise into sixths.

Step 5Place wedges, cut side up, in oiled pan; set aside.

Step 6Combine pepper tops, onion, tomatoes, parsley, the 1/4 cup olive oil, pine nuts, garlic, salt and pepper in medium size bowl.

Step 7Spoon equal amounts of mixture into each of the pepper wedges.

Step 8Bake wedges in preheated oven at 375 degrees for 25-30 minutes or until just tender.

Step 9Sprinkle bread crumbs and remaining 2 tablespoon oil over all.

Step 10Bake 10 minutes longer.
