Ingredients
- 3 pounds new potatos, baby
- 2 tablespoons almond oil
- 2 - jalapeno peppers, seeded, finely chopped
- 2 tablespoons ginger, grated
- 1/2 cup almonds, powdered
- 2 tablespoons cilantro, minced
- - salt and pepper
- - lemon juice
How To Make baby potatoes coated with almonds

Step 1Steam potatoes until just tender, about 15 minutes and set them aside.

Step 2Combine oil, peppers, ginger, almonds and cilantro in a large bowl.

Step 3Add potatoes and toss until well coated.

Step 4Season with salt and pepper and sprinkle with lemon juice.

Step 5Spear potatoes with cocktail sticks; arrange on a platter.

Step 6Serve hot, or keep warm in a 250 degree oven for up to 30 minutes.

Step 7*To powder almonds, place blanched almonds in a food processor and pulse until they are reduced to a powder.
