    new potatos, baby
  • 2 Tbsp
    almond oil
  • 2
    jalapeno peppers, seeded, finely chopped
  • 2 Tbsp
    ginger, grated
  • 1/2 c
    almonds, powdered
  • 2 Tbsp
    cilantro, minced
  • salt and pepper
  • lemon juice

How To Make baby potatoes coated with almonds

    Steam potatoes until just tender, about 15 minutes and set them aside.

    Combine oil, peppers, ginger, almonds and cilantro in a large bowl.

    Add potatoes and toss until well coated.

    Season with salt and pepper and sprinkle with lemon juice.

    Spear potatoes with cocktail sticks; arrange on a platter.

    Serve hot, or keep warm in a 250 degree oven for up to 30 minutes.

    *To powder almonds, place blanched almonds in a food processor and pulse until they are reduced to a powder.
