A delicious appetizer or light meal. Serve with pita chips, crackers or on lightly toasted bread.

Ingredients

  • 1 jar 7-oz. jar roasted red bell peppers, drained and chopped
  • 1 jar 6-oz. jar marinated artichoke hearts, drained and chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup parmesan cheese, freshly grated
  • 1/4 cup olive oil
  • 2-3 tablespoons capers, drained (to taste)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • salt & pepper to taste

How To Make awesome artichoke & red pepper tapenade

  • Step 1
    Add ingredients to a food processor and pulse until mixture is well blended, but still a little chunky. Transfer mixture to a bowl and season with salt & pepper.
  • Step 2
    Serve at room temperature on pita chips or toasted bread. Can be made ahead and refrigerated.
