Ingredients For avocado deviled eggs

  • 6 x lg
    eggs, hard boiled
  • 1 md
    avocado
  • 1 Tbsp
    lime juice
  • 1 Tbsp
    red onion, diced
  • 2 tsp
    jalapeno pepper, diced
  • 1 tsp
    cilantro, dried
  • salt & pepper, to taste
  • 1 Tbsp
    tomato, diced
  • GARNISH:
  • 1 pinch
    chili powder

How To Make avocado deviled eggs

  • 1
    Peel the cooled hard boiled eggs. Cut the eggs in 1/2 horizontally & set the yolks aside.

    In a bowl, mash the avocado & 3 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeño, cilantro, salt & pepper & adjust to taste. Gently fold in tomato.

    Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color & arrange on a platter.
