Ingredients
- 6 x large eggs, hard boiled
- 1 medium avocado
- 1 tablespoon lime juice
- 1 tablespoon red onion, diced
- 2 teaspoons jalapeno pepper, diced
- 1 teaspoon cilantro, dried
- - salt & pepper, to taste
- 1 tablespoon tomato, diced
- GARNISH:
- 1 pinch chili powder
How To Make avocado deviled eggs

Step 1Peel the cooled hard boiled eggs. Cut the eggs in 1/2 horizontally & set the yolks aside.

Step 2In a bowl, mash the avocado & 3 whole egg yolks; discard the rest. Mix in lime juice, red onion, jalapeño, cilantro, salt & pepper & adjust to taste. Gently fold in tomato.

Step 3Scoop heaping spoonfuls of the guacamole into the 12 halved eggs. Sprinkle with a little chile powder for color & arrange on a platter.
