I love avacados!! Always trying to find new recipes for them. Im looking forward to grilling as soon as weather permits. So in the meantime I came across these avacado fries! With a little tweeking to make my own. These are unbelievable!! If you dont care for avacados these are a must try! These are great for St Patricks day!

Ingredients

  • 2 - avacados
  • 2 - eggs
  • 1 1/2 cups bread crumbs
  • 1 - lime peel, grated
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • - oil for frying
  • DIPPING SAUCE
  • 1/2 cup mayo
  • 4 tablespoons fresh chopped cilantro
  • 1 - juice from lime
  • - s&p

How To Make avacado fries

  • Step 1
    Combine dipping sauce ingredients, mix in processor til creamy and set aside.
  • Step 2
    Heat frying oil to 335. In med size bowl combine breadcrumbs, cumin salt and lime zest. Another bowl with eggs beaten. Cut avacados in half, then in 4 inch by 1 inch slices.
  • Step 3
    Place avacado slice in breadcrumbs then egg mix then back in breadcrumbs. Drop in heated oil. Fry for 2-3min. or until golden brown. Remove with slotted spoon and transfer to paper towels. Let sit for 10 mins. Transfer to serving platter with dipping sauce.
