aunt allene's sweet pickles

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Great Aunt Allene Palmer.

Ingredients

  • 7 pounds cucumbers
  • 1 gallon water
  • 1 cup pickling lime
  • 2 quarts vinegar
  • 8 cups sugar
  • 2 tablespoons salt
  • 1 teaspoon celery seed
  • 1 teaspoon whole cloves
  • 1 teaspoon pickling spice

How To Make aunt allene's sweet pickles

  • Step 1
    Wash and slice cucumbers in 1/2-inch chunks.
  • Step 2
    Soak 24 hours in 1 gallon of water and 1 cup of pickling lime.
  • Step 3
    Rinse well in clear water, then soak for 3 hours in ice water.
  • Step 4
    Soak overnight in mixture of vinegar, sugar, salt, celery seed, whole cloves and pickling spice.
  • Step 5
    Boil 35 minutes and seal in hot sterilized jars. these are better when served chilled.
