Ingredients
- 1 pound beef tenderloin, center cut
- 3 tablespoons coarsely ground pepper
- - kosher salt
- - olive oil
- 20 - asparagus stalks, blanched until tender
- HORSERADISH MAYONNAISE
- 1 tablespoon prepared horseradish
- 1/2 cup mayonnaise
- 1 tablespoon chives, fresh/chopped
- - salt and pepper to taste
How To Make asparagus beef roll-ups

Step 1Heat the oil in a large saute pan.

Step 2Season the entire beef tenderloin with kosher salt and pepper.

Step 3Sear the beef on all sides until very brown.

Step 4Meanwhile, make the horseradish mayonnaise.

Step 5In a small bowl combine the horseradish, mayonnaise and chives.

Step 6Season with salt and pepper and set aside.

Step 7Remove the meat from the pan and allow to cool completely.

Step 8Using a very sharp knife, slice the beef into 10 thin slices.

Step 9Season with salt and pepper.

Step 10Spread a thin layer of mayonnaise on one side of the beef and lay 2 spears of asparagus in the center of each piece of beef.

Step 11Roll the beef up over the asparagus.

Step 12Arrange on a plate and drizzle with additional mayonnaise.
