Ingredients

  • 1 1/2 cups bisquick mix
  • 1/2 pound jimmy dean sausage-hot
  • 1/2 pound shredded sharp cheddar cheese
  • 1/2 cup cream cheese
  • 2 - eggs, beaten
  • 1 package pork coating mix
  • 10 - fresh jalapenos with stems attached

How To Make armadillo eggs

  • Step 1
    Carefully cut jalapenos up to stem cap.
  • Step 2
    Remove seeds.
  • Step 3
    Fill jalapenos with cream cheese and close.
  • Step 4
    Combine bisquick, sausage and cheddar cheese and divide into 10 equal portions.
  • Step 5
    Cover each jalapeno, pressing the bisquick firmly onto the jalapenos, leaving the stem of the jalapenos sticking out.
  • Step 6
    Dip each jalapeno in beaten egg, then roll in pork coating mix to cover.
  • Step 7
    On a baking sheet bake at 350 degrees for 20 minutes.
