bisquick mix
1/2 lb
jimmy dean sausage-hot
1/2 lb
shredded sharp cheddar cheese
1/2 c
cream cheese
eggs, beaten
1 pkg
pork coating mix
fresh jalapenos with stems attached

How to Make Armadillo Eggs


  • 1Carefully cut jalapenos up to stem cap.
  • 2Remove seeds.
  • 3Fill jalapenos with cream cheese and close.
  • 4Combine bisquick, sausage and cheddar cheese and divide into 10 equal portions.
  • 5Cover each jalapeno, pressing the bisquick firmly onto the jalapenos, leaving the stem of the jalapenos sticking out.
  • 6Dip each jalapeno in beaten egg, then roll in pork coating mix to cover.
  • 7On a baking sheet bake at 350 degrees for 20 minutes.
