  • 1 1/2 c
    bisquick mix
  • 1/2 lb
    jimmy dean sausage-hot
  • 1/2 lb
    shredded sharp cheddar cheese
  • 1/2 c
    cream cheese
  • 2
    eggs, beaten
  • 1 pkg
    pork coating mix
  • 10
    fresh jalapenos with stems attached

How to Make Armadillo Eggs


  1. Carefully cut jalapenos up to stem cap.
  2. Remove seeds.
  3. Fill jalapenos with cream cheese and close.
  4. Combine bisquick, sausage and cheddar cheese and divide into 10 equal portions.
  5. Cover each jalapeno, pressing the bisquick firmly onto the jalapenos, leaving the stem of the jalapenos sticking out.
  6. Dip each jalapeno in beaten egg, then roll in pork coating mix to cover.
  7. On a baking sheet bake at 350 degrees for 20 minutes.
