Found this recipe on a can of tomatoes and decided to try it. It was a huge hit at our cook out and everyone wanted the recipe.

mexican stewed tomatoes
8 oz cream cheese, at room temp.
mexican blend shredded cheese
frozen chopped spinach, thawed and drained well
How To Make
Saute the chopped onion in a small amount of oil until soft but not brown. Add the canned tomatoes and chili peppers, chop up with a spoon.Add the spinach. Stir in the cream cheese and shredded cheese.Pour into a 9 inch casserole dish. Bake at 350 for 25 minutes.
