For those occasions when you're short on time but want an appetizer with some visual pizzazz! The BelGioioso mozzarella pearls are a marvelous little trick that make this appetizer a cinch. This tasty little beauty could be paired with a lovely young Sangiovese wine. Or when in doubt? A nice brut Champagne goes with everything!

- 1-2 package snacking tomatoes
- 3-4 tablespoons good extra virgin olive oil
- 1-2 tablespoon basil paste (i use gourmet garden)
- 3-4 tablespoons balsamic vinegar
- To Taste flaked salt
- 3/4 cup mozzarella pearls (i use the belgioioso pre-packaged pearls)
How To Make 10 minute caprese salad appetizer
-
Step 1Wash and then gently pat tomatoes dry with paper towels. Slice each tomato into halves or thirds depending on how big and what shape they are. Arrange into rows so the tomatoes are slightly overlapping.
-
Step 2In a small bowl, combine your olive oil and basil paste. Stir until well blended, and then drizzle evenly over tomatoes.
-
Step 3Pour your vinegar into the same bowl you just used for the basil oil (no need to create more dishes!). Drizzle vinegar lightly and evenly over tomatoes. Give the whole plate a sprinkling of flaked salt.
-
Step 4Put your mozzarella pearls into a bowl (you could theoretically cut a larger ball of mozzarella yourself but the pre-packaged pearls are a great time saver) and nestle the bowl of mozzarella onto the plate with the tomatoes. Et voila!! A lovely, colorful dish that comes together in a flash.
