stuffed seafood jalapeno's

First time I had these was years ago at my granddaughters 2nd birthday party My son was making them for the adults... She's 21 now and they get better with each year.

Ingredients

  • 30 medium jalapeno peppers, cleaned
  • 2 packages cream cheese, soft
  • 2 cans small shrimp, drained
  • 2 cans canned crabmeat, flaked and drained
  • 3 teaspoons garlic, pressed
  • 2 pounds bacon
  • 1/2 package dry ranch dressing
  • 1/2 cup cheddar cheese, shredded
  • 1 teaspoon old bay seasoning
  • 1 box toothpicks

How To Make stuffed seafood jalapeno's

  • Step 1
    I always clean the Jalapeno's the night before. Makes it so much easier. Wear food prep gloves and glasses. Jalapeno juice in a cut or your eyes is painful. I put the jalapeno's in ice water over night. It takes some of the bite out of it.
  • Step 2
    Drain the crab and shrimp. In a bowl mix the soft cream cheese,crab and shrimp, dry ranch dressing and Old Bay Seafood Seasoning and cheese. Mix well. Refrigerate over night.Flavor marries really nicely.
  • Step 3
    The next morning drain the Jalapenos well before you stuff them.
  • Step 4
    Take the stuffing out and let it get soft. Make sure you use a pastry bag for stuffing the Jalapeno's. Much easier than trying to spoon it in. The larger the tip the better.
  • Step 5
    Squeeze the stuffing into the Jalapeno,then wrap the bacon around the Jalapeno. Then put the toothpick in to hold bacon in place.Place in Jalapeno rack.
  • Step 6
    Cook on Grill for 20 minutes or bacon is crisp!
