Ingredients
- 1 pound cooked lobster, cubed or chopped
- 1/2 cup mayonnaise
- 2 teaspoons olive oil, extra virgin
- 1 teaspoon vinegar
- 1 teaspoon salt
- 4 small avocados, halved, carefully peeled
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 8 - green olives, optional
- - red pimentos, canned,
How To Make stuffed avocados

Step 1Cut avocados in half and peel carefully. Mix vinegar, oil, paprika, salt and pepper. Marinate the avocadosin the mix. Place in refrigerator for about 15 minutes.

Step 2Cut lobster in cubes, mix with mayo. Fill avocado halves with lobster. Decorate with the olives and pimentos.

Step 3Serve cold over lettuce leaves.
